Roasted and Spiced Chickpeas

Roasted chickpeas are a great substitute for croutons in salads, or simply enjoy them on their own as a snack. Season chickpeas with oil, salt and pepper before roasting then bake until crispy. Once out of the oven, top with your favourite herbs. We recommend fennel seeds, cumin, curry powder or chilli flakes for a kick of flavour.

Make your salads burst with flavour. This chickpea blend is a great salad topper or pita filling. To make, mash canned chickpeas with a fork and mix with mayonnaise, sliced green onions, diced celery and finely chopped dill pickles. Add herbs, tomatoes, cucumber and parsley. Add a big scoop to your favourite mix of salad greens and chopped veggies. Drizzle with your favourite salad dressing for a refreshing spring salad. Add canned tuna for extra protein-it will stay fresh for two days in the fridge. Without tuna, you can keep the blend in the fridge for up to three days.
